Since I live in Malaysia, Our potato skin can't be eaten since it's full of dirt. :P Because of that, I use Russet Potatoes.
- Skin the potatoes off, in this example, I'll take 3 potatoes.
- Boil that until they are tender, not too soft like the mashed potatoes, but just boil them through.
- While the potatoes are almost perfect, take another pan and pour olive oil in it.
- Mince Garlic. LOTS OF IT. For 3 potatoes, I'll take 5-6 cloves.
- Make sure the fire isn't too hot. Put it on medium-Low.
- The Garlic SHOULD be golden brown, NOT burnt.
- After the Potatoes are done, scoop them out, careful not to destroy the half-solid potato. (Cus it's soft)
- Slice the potatoes in half horizontally. (l l)
- Use a butter knife and just spread lots of butter (To your liking) on every external surface area of the potato. As in, the rounded parts, flat parts.
- Dress the potato with Salt and Pepper. Tastes good with salt, because it's a HALF potato, it's tasteless in the middle.
- Take out the aluminium and put half a potato with butter in it, don't forget to drizzle the potato with a lot of garlic oil and fried garlic that you fried earlier. Do the same treatment with the other potatoes. Well you gotta give them some love :)
- Wrap the potatoes in the aluminium.
- Cook them in the oven over a temperature of 240C for 15-20 minutes.
